(Natori, Miyagi) Water dropwort

The famous, fully organically farmed seri (water dropwort) grown by Miura-san. We use everything from the leaves to the roots from the especially fragrant spring harvest.
Seri harvested in the morning we distill that very same day. The clean, cool herbal notes are what make Keyaki stand out from the crowd.

We source or yuzu from three regions of Miyagi Prefecture.
Our freeze-and-drip method allows us to access the full, rich aromas of the yuzu fruit.
Plays a large part in making the Keyaki gin & tonic so refreshing.

We use Monou tea leaves, famous for being the most northernly grown tea in Japan.
Subtle aromas and a faint bitterness help to pull together and tighten Keyaki’s flavors.

We use the skins from Akiu Winery’s Merlot grapes.
Sweet, grape-like aromas help bring other flavors and aromas into harmony and give depth and body to Keyaki.

Juniper berries/Coriander seed

Juniper berries/Coriander seed

(Serbia, Morocco)

The juniper berry comes from conifers that grow widely across Europe. It takes ten long years before a tree produces berries. The berries measure roughly 1cm in diameter and have herbal and spicy aromas. Juniper berries produce the unique gin like flavors and provide the backbone on which other flavors are layered.

The seeds of the coriander plant taste differently from the stems and the leaves. Citrus-like aromas of lemon and orange zest help give balance to Keyaki’s flavor profile.

Tasting notes

Rich aromas of yuzu spread across one’s palate before the strong flavors of juniper berry arrive in tandem and in balance with the clean flavor of seri. The coriander seed and grape skins provide the bass note, enveloping and bringing together the brighter flavors before the green tea leaves add a dash of bitterness to bring the whole symphony to a tight finish.
